Spanish beans with chorizo and chicken
So, the lovely British summer has not been so kind this week. I spent a week at my parents having to run about between showers, but, this made this weeks recipe selection a whole lot easier. It has been quite a porky week, it started with a chorizo fittata for breakfast Saturday at my big sisters, followed by a hog roast for her house warming party, pork for Sunday lunch and then my Spanish beans with chicken and chorizo Monday.
I love one pot cooking, not just because it saves on the washing up but because I love putting a big comforting bowl on the table for my guests to tuck in and enjoy and its unapologetic. As with Henri's paella this recipe for four fed more like six, note to self: MUST WORK ON PORTION CONTROL.

Ingredients
1 tin of your favourite beans (I used white kidney beans
1 onion chopped
1 tbsp paprika
1 pepper chopped
4 chicken thighs, skin on
250g already cooked small potatoes
250g chorizo chopped
Chicken stock
100g spinach
Method
Preheat your oven and roast your salted and peppered chicken thighs for 30 minutes or until cooked through, set a side and leave to cool.
Meanwhile, heat some oil in a large saucepan and gently fry the onions until they are soft and then add the chorizo, paprika and peppers.
Shred the chicken when cool enough to handle and add to the chorizo. Next add the potatoes, beans and the chicken stock and leave to simmer until the potatoes, beans and chicken have warmed through.
Finally, just before serving add the spinach and when it has wilted serve with crusted bread.
We had plenty left over and if I were to make it again I would re-heat the leftovers with some orzo and more stock.
